Cuban Black Beans and Rice with Roasted Peppers and Plantains
- really good!
- swapped plantains for steamed potato slices
- roasted courgettes / white onion / red peppers / garlic (2x of each)
Tofu, Roast Veg, Kale, BUDDHA Bowls With Peanut Sauce
- tofu crisped well in the oven
- steamed kale with salt very tasty
- peanut sauce, good but less vinegar next time.
- used maple syrup instead of coconut sugar

Vegan Spinach-and-Cashew Ravioli
- Subbed Walnuts for cashews
- Pasta worked out
- Filling needs more punch
- Try food processing the filling so the ravioli can be packed more.
