  • swapped plantains for steamed potato slices
  • roasted courgettes / white onion / red peppers / garlic (2x of each)

  • tofu crisped well in the oven
  • steamed kale with salt very tasty
  • peanut sauce, good but less vinegar next time.

Vegan Spinach-and-Cashew Ravioli

  • Subbed Walnuts for cashews
  • Pasta worked out
  • Filling needs more punch
  • Try food processing the filling so the ravioli can be packed more.
